Pimento Cheese

 

 

I’ll be making a quick and easy dip/spread thingy for the ‘big game’ on Sunday. The picture is from the original recipe that you can find here. I had to eliminate the use of ‘low fat’ items to make more of a REAL food appetizer. This recipe was a special request by Lulu (age 15) who loves it each time I make it.

Pimento Cheese

1/4 cup (homemade) mayonnaise
1/8 teaspoon chili powder
1 1/2 cup Shredded Cheddar Cheese (raw preferred)
1 4 ounce jar chopped and drained pimentos
2 tablespoons minced green onion

In a medium bowl, mix together mayo and chili powder until blended. Add remaining ingredients. Chill for a few hours. Serve with Sourdough Crackers or your favorite cracker.
